Everything’s better with Tahini

tahiniStill experimenting with hummus wrap sandwiches to bring to work for lunch. The other night I made falafel (the kind from the box because I was feeling lazy), and the resulting sandwich was entirely too dry. I realize now why when you get falafel sandwiches made by experts (you know, like street vendors or the guys at Mamoun’s) it comes dripping with sauce. So this morning I looked up how to make tahini sauce, and was surprised at how simple it is! Basically, it’s one part lemon juice to two parts tahini, plus a little water to make it more liquidy, and salt and garlic if you like.

You want an official recipe? Fine.

Tahini Sauce (for falafel sandwiches, or to drizzle on top of any Middle Eastern dish)

½ cup tahini (sesame paste)
¼ cup lemon juice
1-2 tablespoons olive oil
Dash of salt
Dash of cumin and/or paprika (optional)
1 clove crushed garlic (optional)
1 tsp chopped parsley (optional)

 Stir first four ingredients together in small bowl. Add water in small splashes, stirring in between until slightly runny consistency is reached. Add other stuff, if it “floats your fancy,” as my friend Dhaval says. Put on anything and everything.
