Most Festive Salad Ever

Easy, inexpensive, and fun salad for a summertime side dish. Thanks, Vegansaurus, for the inspiration!

My version of recipe for: Corn Fiesta Salad

4 ears of corn
1 jalapeño, minced
1 red onion (only use 1/2 or more, to taste), diced
1 red bell pepper, diced
1/2 of 1 green, yellow, or orange bell pepper, diced
2 firm tomatoes (like Roma), diced
1 lime
1 tsp red pepper (or to taste)
salt and pepper to taste

Preheat oven to 450. Roast corn for 20 minutes, turning once. Set aside to cool.
Dice veggies and add to a medium bowl. Slice kernels off corn and add to bowl. Add salt, pepper, red pepper, and any other spices you like, plus juice of 1 lime.

Some ideas: I think adding some chopped cilantro might be nice. And if you want more heat, find a spicier pepper or add more jalapeño. This makes a decent-size bowl, so you can share with friends or eat throughout the week.
