cowhuggerbutt_catI just discovered that Portland, Oregon, has a vegan mini-mall. That’s amazing! It includes a grouping of veg-licious stores such as:

* Herbivore Clothing Co.

* Food Fight! Vegan Grocery

* plus a tattoo parlor and acupuncture clinic.

Incredible! I ♥ the hippie qualities of Portland. Must definitely visit these stores the next time I’m in town. (Would consider moving there if it weren’t for the months of torrential downpours and cloudiness. Oh, Oregon.)

Today is the first cloudy day in like a month. It’s been sunny and 90 for quite a while. Seriously. Portland is home to what I think is the world’s first vegan, pirate-themed strip club. Guessing that’s probably not your thing though.
Also, I made some muffins that were really good, and just so happened to be vegan, called Morning Glory Muffins. My version is a combination of two different recipes; if interested, I could email you the recipe.

Here you go:

Morning Glory Muffins

1 1/3 C Whole Wheat Flour
1/2 C Brown Sugar
1 1/2 tsp Baking Soda
1 1/2 tsp Baking Powder
1 tsp Cinnamon
1/4 tsp Salt
1 Whole Banana, mashed
1/3 C oil
1 Apple, skinned, cored, and diced
1/2 C Raisins
3 Medium sized carrots, grated
1/2 C Walnuts or nuts of your choice
12 oz of soft tofu
1 small can of crushed pineapple, drained

Puree tofu, oil and sugar together in a blender. Mix together all dry ingredients. Add in wet ingredients and mix well. Pour into muffin pan and bake at 350 F for about 30 minutes. Yields 12 muffins.
