Crazy easy vegan blueberry muffins

I made these last week from a recipe posted on Fat Free Vegan Kitchen. So simple and tasty! There are some great deals on blueberries out there right now, so this is a perfect time to make these.

This is how mine looked:

3/4 cup fat free soy milk (or rice or almond)
1/2 cup applesauce
1/4 cup water
2 cup whole wheat pastry flour
1/2 cup vegan sugar
3 teaspoon baking powder
1 teaspoon salt
1 cup blueberries

Crumb Topping (optional):

1/3 cup sugar
1/4 cup flour
1 tablespoon cinnamon
2 tablespoons vegan margarine

Mix wet ingredients. Mix dry ingredients. Add blueberries to dry ingredients and coat with the flour mixture. Mix together. For topping, combine sugar and flour. Cut in margarine until mixture resembles course crumbs; sprinkle about 1 tablespoon over each muffin. Bake at 400 degrees for about 18 minutes.

If you can use real salt why can’t you use real sugar? Just want to know.

Good question! Many producers of refined white sugar use bone char, which is made from the bones of cows, in the filtering process to make it whiter. The bone char does not get into the sugar but it still means animals were killed to make the product, so most vegans avoid it.

But the best is to find organic, natural (less refined) sugars, or to use raw sugar like turbinado, or an alternative sweetener like agave nectar.

Far as I know, salt production does not directly involve the harming of any animals. But you should use sea salt when you can, because it tastes better!
